Balsamic Honey Glazed Cornish Hens

  • 2 Cornish Hens split in half (choose smaller ones for thorough cooking)
  • 2 tablespoon Arbor Hill Three Oak Balsamic Vinegar
  • 2 tablespoons Vegetable or Olive Oil
  • 1/4 teaspoon Salt
  • 1-1/2 teaspoon dried Sage
  • 1/4 teaspoon Black Pepper
  • 1/4 cup Honey

Locate a flat broiler pan 6 inches fro broiler pan 6 inches from broiler element and preheat broiler. Brush each half hen with a little oil and season with salt & Pepper. In a small bowl, whisk the honey, vinegar and sage together. Set aside.

Broil the hens, wing side down, until brown, approximately 15 min. turn hen halves and broil until the skin is golden brown and hen shows not sigh of pink when pierced in the thick area between wing and breast, 10-15 min. During the last 5 minutes of cooking, brush the hen often with the honey and vinegar mixture, turning the half’s once or twice until glazed. Serve hot.
