Arbor Hill Wine Sausage and Tortellini Soup

  • 1 lb. Arbor Hill's Sherried Wine Sausage, sliced
  • 1 cup Chopped Onion
  • 2 large Garlic Cloves, sliced
  • 5 cups Beef Stock or Canned Broth
  • 2 cups chopped Tomatoes, (about 3/4 lb.)
  • 1-8oz. can Tomato Sauce
  • 3 large Carrots, thinly sliced
  • 1 medium size Green Pepper, diced
  • 1/2 cup Arbor Hill's Noir Wine
  • 2 tablespoons Dried Basil
  • 2 tablespoons Dried Oregano
  • Salt & Pepper to taste
  • 1 can Cannellini Beans
  • 8-10 oz. purchases fresh Tortellini
  • Freshly grated Parmesan Cheese

Sauté Arbor Hill's Sherried Wine Sausage onion and garlic, about 5 minutes. Put the mixture in a large Soup Pot and add stock, Tomatoes, Tomato Sauce, Carrots, Bell Pepper, Arbor Hill's Noir Wine, Basil and Oregano. Simmer until vegetables are tender, about 40 minutes. (Can be prepared 2 days ahead. Cover and refrigerate. Bring to simmer before continuing). Add tortellini and beans to soup and cook until tender, about 8 minutes. Season soup to taste with salt and pepper. Ladle soup into bowls. Sprinkle with Parmesan and serve.
