2008 Winzerfest Moores Diamond Sauerkraut
- 4 Onions
- 1 5 oz. can Pineapple pieces
- 2 tablespoons cooking oil
- 1-1/2 lbs. of Sauerkraut
- 1/2 Cup of
Arbor Hill’s Moores Diamond Wine
- 1 Bay leaf
- 4 Juniper berries
- 6 Peppercorns
- 1/2 cup Bacon Bits
- Salt, sugar, & Pepper to taste
Peel & chop the onions. Heat the oil in a pan. Gently cook
the chopped onion. Pull the sauerkraut loosely apart and add the
Arbor Hill Moores Diamond Wine. Put the pineapple pieces and ½
cup of bacon bits in the sauerkraut. Add the bay leaf, juniper
berries and peppercorns, season with salt and cook the
sauerkraut covered over low heat for 25-30 minutes, stirring
occasionally. Add some liquid at intervals of necessary. Season
the sauerkraut with salt, sugar and pepper.
