2008 Winzerfest Moores Diamond Sauerkraut

  • 4 Onions
  • 1 5 oz. can Pineapple pieces
  • 2 tablespoons cooking oil
  • 1-1/2 lbs. of Sauerkraut
  • 1/2 Cup of Arbor Hill’s Moores Diamond Wine
  • 1 Bay leaf
  • 4 Juniper berries
  • 6 Peppercorns
  • 1/2 cup Bacon Bits
  • Salt, sugar, & Pepper to taste

Peel & chop the onions. Heat the oil in a pan. Gently cook the chopped onion. Pull the sauerkraut loosely apart and add the Arbor Hill Moores Diamond Wine. Put the pineapple pieces and ½ cup of bacon bits in the sauerkraut. Add the bay leaf, juniper berries and peppercorns, season with salt and cook the sauerkraut covered over low heat for 25-30 minutes, stirring occasionally. Add some liquid at intervals of necessary. Season the sauerkraut with salt, sugar and pepper.
